     Weather, crop yields, government hoarding, reduced transportation, Just In Time (JIT) shelf stocking and market forces all effect food availability and price. Economists note that commodity food prices are at a 20 year high, and rising. NAFTA increased food risks because imports are up, but border safety inspections are way down. Add corporate mergers, downsizing and other societal stresses, and your ability to obtain food is diminishing.

Water, water everywhere, and not a drop to drink...
     Others will tell you to store one to two gallons per person per day for up to one month. One gallon to drink. One for everything else. Are you comfortable with that ? I'm not. 
     Human potential studies document that a person can live up to three, maybe four days, before dehydration begins to end the persons' life. You do need at least one gallon, on average, per person per day for drinking. Physical activity, health or illness / injury, and individual fluid consumption will raise or lower this average.
     Dehydrated food requires water to be rehydrated and cooked. You should figure at two additional quarts per person per day, for rehydrating and cooking. To be safe, make this one gallon per person per day.
     Cooking utensil washing adds another one to two quarts per person per day. Rinsing adds another one to two quarts per person per day. To be safe, make this one gallon per person per day.
     Bathing is important for physical and psychological health. It is possible to sponge bathe with one to two quarts, and rinse with two quarts to one gallon, per bath. To be safe, make this two gallons per person per bath. 
     Washing clothes and other cleaning needs add to the gallons per person water requirements. 
     So, how much should you store ? It is better to have more water than less. After considering the above, you may conclude that having at least five drinkable gallons per person per day for one month would be a good place to start. You would be right. I plan to store much more.

Why dehydrated food ?
      People who have tried long term storage dehydrated food fully understand their convenience and appeal. Dehydrated foods are measured, add proper water and cook, seasoning further if desired. Fruits and vegetables store 10-15 years. Grains and legumes 15-20 years. Dairy and related products 5-10 years.
     Several cookbooks and a video are in this catalog. Depending upon product, packaging is from small #2.5 cans (@ 1 quart) up to 100 pound bags. Kitchen, water purification and storage equipment are available.
     Buying, storing and eating long term storage food is cost effective and convenient when compared to food store products. Buying one or more year plans saves you all those trips to the store. Cost per person can be less than food stores.
     Many consume this food on a regular basis. Others store it as contingency against job loss or other disasters. They are prepared and will eat, while others go hungry or starve. Which do you choose ?

How much food should you store ?
     Others will tell you to have one years' food per person. Depending upon your philosophy towards current and future events, this could be too little. Given how long these foods last, there is a growing trend to store five to fifteen years worth per person. I have two years and plan more.
